Whilst neither organic nor biodynamic by certification, Francisco runs his vineyards on holistic principles, using tinctures and infusions, very little sulphur or copper and following lunar influences, as previous generations did. The vines are allowed to grow relatively unchecked, with no trimming or shoot thinning in the summer to provide the maximum protection to the fruit and to achieve a balance with the canopy; the only intervention comes in August, after véraison, when the fruit changes from green to red when Francisco removes excess bunches to ensure maximum ripeness in the remaining ones. Harvesting is by hand into small baskets, with natural yeasts for fermentation; malolactic fermentation happens in new French oak, after which the wines are aged before bottling without any fining or filtration.

75% Tempranillo with Garnacha, Bobal and Albillo Mayor. Just 12 hectolitres per hectare because of the heat and drought in 2022 (normally it would still only be 18 - 20 hl/ha).
Deep in colour to the rim with a nose of creamed black fruits, very dense and almost textured crushed black skinned fruit, oriental spices, with velvety black cherry notes leading to a massive palate of supple, soft, creamed black fruits, deliciously spiced with a chocolatey texture, fresh with supple tannins behind and an incredibly long finish, This is so alluring, so easy to drink now, yet it will keep (and evolve) for several years to come.
