David Rossignol was surprisingly upbeat when we saw him, given that the Domaine had lost around 40% of the crop to the 2021 frost, but he pointed out that in his grandfather’s time losses were regularly higher. Harvest for the Domaine was at the end of September, very late even for Rossignol-Trapet, who are regularly one of the last to harvest in both Gevrey and Beaune, following the maturity of the vine rather than any particular calendar. David also pointed out, in reference to whole bunch fermentation, that before the 1990s it was the norm, and that things are coming round full circle. They normally use around 50% whole bunch, and even in 2021 they did the same as they have found that when they compare cuvées with and without whole bunch, they always prefer the whole bunch lot.

2021 was a small, late harvest of very pure, floral fruit and their Gevrey Vieilles Vignes has a lovely succulent spiced note over the red fruits with fine supple tannins behind.
