Lucie described this as ‘a return to the old style’, from her grandfather’s time, when waiting for phenolic maturity was an ill-afforded luxury; they macerated the fruit pre-fermentation at cool temperatures, allowing them to extract fruit flavours without gathering harsh tannins at the same time.
